Cheesecake (Gelatine Set)
Light and airy gelatine-set cheesecake

Ingredients
- 1 tbspGelatine
- 0.5 cupWater
- 1 tbspLemon rind
- 0.25 cupLemon juice
- 1 cupCream cheese
- 1 cupEvaporated milk
- 1 tspVanilla essence
- 1 cupSugar
- 2 cupsSweet biscuit crumbs
- 1 tbspSugar(for base)
- 0.5 tspCinnamon
- 0.5 tspNutmeg
- 0.5 cupShortening(melted)

For the base combine all of the ingredients and press into the bottom and sides of a round dish. Chill in the refrigerator.

Soften the gelatine in the water.

Dissolve lemon rind and softened gelatine over hot water, cool.

Mix cream cheese and sugar together and add to gelatine and lemon juice.

Chill until partially set.

Whip icy cold milk to soft peaks in a chilled bowl.

Beat in cream cheese mixture and vanilla essence.

Pour into the base. Chill for 6-8 hours or overnight.
