Cheesy Herb and Potato Pie
Layered potato pie with herbs and cheese in puff pastry

Ingredients
- 500 gPotatoes(peeled, sliced)
- 1 sheetPuff pastry
- 1 cupCheese(grated)
- 1 wholeOnion(sliced thinly)
- 1 tbspFresh parsley(chopped)
- 1 tbspFresh basil(chopped)
- 1 tspFresh rosemary
- 1 to tasteSalt and pepper
- 0.5 cupMilk

Line the base and sides of a round cake tin or flan dish with pastry.

Scatter half the cheese over base of pastry.

Layer with potatoes, onions, herbs, salt and pepper.

Top with remaining cheese and pour milk over.

Brush pastry edge with extra milk.

Bake in preheated 220°C oven for 40 minutes.
