Chunky Minestrone

Ingredients

  • 2 tspOlive oil
  • 0.33 cupSpiral pasta
  • 2 clovesGarlic(crushed)
  • 1 cupCabbage(shredded)
  • 1 mediumOnion(chopped)
  • 1 mediumTomato(chopped)
  • 1 mediumPotato(chopped)
  • 1 mediumZucchini(sliced)
  • 1 mediumCarrot(chopped)
  • 100 gBroccoli(chopped)
  • 1 tbspPlain flour
  • 1 tbspFresh parsley(chopped)
  • 4 cubesVegetable stock cubes
  • 1.5 litresWater

Instructions

    Heat oil in a saucepan, add garlic, onion, potato and carrot. Stir over heat for about 2 minutes.

    Add flour, stir over heat for 1 minute.

    Stir in tomato paste, crumbled stock cubes and water. Bring to the boil and simmer for 10 minutes.

    Add pasta, cabbage and tomato, simmer for 5 minutes.

    Add zucchini and broccoli, simmer for 2 minutes.

    Sprinkle parsley over soup and serve.
