Chunky Minestrone
A hearty Italian vegetable soup with pasta

Ingredients
- 2 tspOlive oil
- 0.33 cupSpiral pasta
- 2 clovesGarlic(crushed)
- 1 cupCabbage(shredded)
- 1 mediumOnion(chopped)
- 1 mediumTomato(chopped)
- 1 mediumPotato(chopped)
- 1 mediumZucchini(sliced)
- 1 mediumCarrot(chopped)
- 100 gBroccoli(chopped)
- 1 tbspPlain flour
- 1 tbspFresh parsley(chopped)
- 4 cubesVegetable stock cubes
- 1.5 litresWater

Heat oil in a saucepan, add garlic, onion, potato and carrot. Stir over heat for about 2 minutes.

Add flour, stir over heat for 1 minute.

Stir in tomato paste, crumbled stock cubes and water. Bring to the boil and simmer for 10 minutes.

Add pasta, cabbage and tomato, simmer for 5 minutes.

Add zucchini and broccoli, simmer for 2 minutes.

Sprinkle parsley over soup and serve.
