Custard Pie
No-bake custard pie with biscuit base and coconut cream

Ingredients
- 250 gWheatmeal biscuits
- 150 gButter(melted)
- 4 tbspCustard powder
- 0.5 cupWater
- 400 gCondensed milk
- 1 cupWarm water
- 1 wholeEgg(beaten)
- 2 tbspDesiccated coconut
- 0.75 cupWhipped cream

Finely crush the biscuits and place in a bowl.

Pour in the melted butter and mix well. Press onto base and sides of a 20cm round dish.

Chill for 2 hours.

Blend custard powder with the half cup water in a saucepan.

Beat in condensed milk, warm water and egg.

Stir constantly over low heat, until custard boils.

Remove from heat and beat vigorously until smooth. Cool slightly.

Whisk in coconut and cream.

Spoon mixture into chilled base and refrigerate for 3-4 hours or overnight.
