Traditional Greek salad with feta, olives and homemade croutons

Ingredients

  • 8 slicesBread slices
  • 2 clovesGarlic(crushed)
  • 2 tbspOlive oil
  • 350 gFeta cheese
  • 3 wholeTomatoes
  • 2 smallRed onions(sliced)
  • 1 cupKalamata olives
  • 1 wholeCucumber(sliced)
  • 0.25 cupFresh parsley
  • 0.25 cupFresh mint
  • 0.33 cupOlive oil(for dressing)
  • 1 tbspWhite wine vinegar
  • 2 tspLemon juice
  • 1 tspSugar

Instructions

    Remove crusts from bread, cut each slice into 9 squares.

    Combine bread, garlic and oil in a bowl and toss well.

    Place bread in a single layer on an oven tray. Cook in moderate oven for about 15 minutes, turning halfway.

    Cut cheese into 2cm cubes. Cut tomatoes into wedges.

    For the dressing combine all ingredients in a screw top jar.

    Combine cheese, tomatoes, onions, cucumber, olives and herbs in a large bowl.

    Add croutons and drizzle with dressing. Toss gently.
