Kiwi Fruit Yoghurt Ice Cream
Healthy frozen dessert with fresh kiwi fruit and yoghurt

Ingredients
- 0.5 cupApple juice
- 2 tspGelatine
- 2 tbspHoney
- 500 gNatural yoghurt
- 8 wholeKiwi fruit(peeled)
- 2 wholeEgg whites
- 2 tbspSugar

Stir gelatine into apple juice to soften.

Microwave on high for 20 seconds to dissolve gelatine.

In a food processor or blender, combine honey, yoghurt and kiwi fruit. Blend until smooth.

Add dissolved gelatine. Pour into a cake tin and freeze for at least 2 hours.

Using an electric mixer, beat egg whites until stiff, add sugar and continue beating until mixture is smooth.

Carefully scrape egg white mixture to a plate and set aside.

Using the same mixing bowl, beat frozen yoghurt mixture until it is fluffy.

Fold in egg white mixture. Pour back into cake tin and refreeze for at least 2 hours.
