Lemon Delicious Pudding

- 30 gButter
- 0.75 cupSugar
- 3 tbspSR flour
- 2 wholeLemons
- 1 cupMilk
- 2 wholeEggs(separated)

Soften butter and blend with sugar.

Stir in sifted flour, add grated lemon rind and juice from both lemons.

Blend in milk and egg yolks.

Beat egg whites until stiff but not dry and fold into mixture.

Pour into a pie dish containing about 2.5cm water.

Bake at 190°C for 45 minutes.
