Lemon Dumplings
Zesty lemon dumplings cooked in citrus syrup

Ingredients
- 1 wholeLemon
- 1 cupSR flour
- 4 tbspWater
- 1 tbspButter
- 1 pinchSalt
- 2 cupsBoiling water
- 1 tbspGolden syrup
- 0.5 cupSugar
Instructions

Sift flour and salt and rub in butter.

Add rind of half the lemon.

Mix into a soft dough with the water.

Roll mixture into balls.

Place the boiling water, golden syrup, sugar and juice of the lemon into a saucepan and boil.

Drop in the dumplings and cook, covered, for 30 minutes.
