Plum Pudding
Traditional rich Christmas pudding with mixed fruits and spices
Ingredients
- 1 kgMixed fruit
- 185 gPrunes(chopped)
- 185 gMixed peel
- 1 lemonLemon rind
- 90 gBlanched almonds(chopped)
- 1 wholeLarge carrot(grated)
- 250 gSoft white breadcrumbs
- 250 gWhite sugar
- 125 gFlour
- 0.5 tspSalt
- 0.5 tspNutmeg
- 1 tspMixed spice
- 4 wholeEggs
- 0.75 cupMilk
- 1 cupOrange juice
- 250 gButter(melted)

Mix together the mixed fruit, mixed peel, lemon rind, almonds, carrot, breadcrumbs and sugar.

Sift the flour, salt, nutmeg and mixed spice and add to the fruit mix.

Lightly beat eggs and add to milk, orange juice and butter. Mix well.

Combine the dry ingredients and egg mixture.

Spoon the mixture into greased one 2 litre basin or two 1 litre basins. Leave about 1 cm from the top of the basin.

Cover the basin with a round of grease proof paper and a round of foil. Tie securely with string.

Place in a saucepan of boiling water, allow water to come half way up the basin, place a lid on the saucepan.

Boil gently for 5 hours for the larger pudding and 3 hrs for the smaller, topping up with extra water as required.

On the day of serving boil for a further 2-3 hours or heat in microwave.
