Ingredients

  • 3 wholeLarge potatoes(1cm slices)
  • 2 wholeRed capsicum(1cm strips)
  • 1 wholeEggplant(1cm strips)
  • 1 tbspThyme
  • 1 tbspGarlic
  • 100 mlOlive oil

Instructions

    Layer slices of potato, capsicum and eggplant in a microwave dish with lid.

    Season each layer with thyme, garlic and olive oil.

  3. 3

    Cook on high for 6 minutes then gently stir and cook for a further 6 minutes.

    Serve warm.
