Potato, Eggplant and Capsicum Salad
Warm Mediterranean-style vegetable salad with herbs

Ingredients
- 3 wholeLarge potatoes(1cm slices)
- 2 wholeRed capsicum(1cm strips)
- 1 wholeEggplant(1cm strips)
- 1 tbspThyme
- 1 tbspGarlic
- 100 mlOlive oil
Instructions

Layer slices of potato, capsicum and eggplant in a microwave dish with lid.

Season each layer with thyme, garlic and olive oil.

Cook on high for 6 minutes then gently stir and cook for a further 6 minutes.
