Potato Soup
Rich and creamy potato soup with herbs

Ingredients
- 2 tbspButter
- 1 mediumOnion(chopped)
- 2 clovesGarlic(chopped)
- 1 mediumLeek(chopped)
- 4 mediumPotatoes(chopped)
- 3 cupsChicken stock
- 250 mlThickened cream
- 0.25 tspGround nutmeg
- 2 tbspFresh parsley(chopped)
Instructions

Melt the butter, fry onion, garlic and leek for 3 minutes.

Add potato and stock. Bring to the boil, reduce heat and simmer for 25 minutes.

Blend until smooth.

Return to heat, stir in cream and nutmeg.

Sprinkle with parsley before serving.
