Ricotta Hotcakes
Light and fluffy pancakes with ricotta cheese and strawberries

Ingredients
- 1 cupWholemeal plain flour
- 0.5 cupPlain flour
- 2 tspBaking powder
- 0.25 cupCastor sugar
- 2 wholeEggs(separated)
- 1.5 cupsButtermilk
- 150 gRicotta cheese(crumbled)
- 250 gStrawberries(sliced)
- 2 tbspHoney

Sift flours and baking powder. Stir in sugar.

Whisk egg yolks, buttermilk and ricotta in a jug.

Beat egg whites in a bowl until soft peaks form.

Stir buttermilk mixture into the dry ingredients until just combined.

Gently fold in egg whites and cook as pancakes.

Top with strawberries and honey.

Note: If buttermilk is not available, mix 1 tablespoon of white vinegar to one cup of milk.
