Ingredients

  • 1 cupWholemeal plain flour
  • 0.5 cupPlain flour
  • 2 tspBaking powder
  • 0.25 cupCastor sugar
  • 2 wholeEggs(separated)
  • 1.5 cupsButtermilk
  • 150 gRicotta cheese(crumbled)
  • 250 gStrawberries(sliced)
  • 2 tbspHoney

Instructions

    Sift flours and baking powder. Stir in sugar.

    Whisk egg yolks, buttermilk and ricotta in a jug.

    Beat egg whites in a bowl until soft peaks form.

    Stir buttermilk mixture into the dry ingredients until just combined.

    Gently fold in egg whites and cook as pancakes.

    Top with strawberries and honey.

    Note: If buttermilk is not available, mix 1 tablespoon of white vinegar to one cup of milk.
