Sticky Date Pudding
Rich moist pudding with dates and warm spices

Ingredients
- 250 gDates(chopped)
- 0.5 tspCinnamon
- 0.5 tspNutmeg
- 660 mlCold water
- 1 cupCastor sugar
- 160 gButter
- 2.25 cupsSR flour
- 1 tspBaking soda
- 2 wholeEggs
- 160 mlBoiling water

Preheat oven to 160°C.

Place dates, cinnamon, nutmeg and cold water in a large saucepan over high heat until dates are soft.

Remove from heat. Stir in butter and sugar.

Stand for 10 minutes until sugar is dissolved.

In a large bowl, sift flour and baking soda.

Pour date mixture into a separate bowl. Whisk in eggs one at a time followed by boiling water, then add dry ingredients.

Grease two loaf tins and line with baking paper. Sit tins in a deep roasting pan and fill with mixture.

¾ fill roasting tin with water. Bake for 1 hour.

To serve, drizzle with warm caramel sauce, top with ice cream.
