Traditional Middle Eastern parsley salad with bulgur wheat

Ingredients
- 0.75 cupCracked wheat (bulgur)
- 0.75 cupOnion(chopped)
- 0.33 cupFresh mint(chopped)
- 1 cupParsley(chopped)
- 2 wholeTomatoes(diced)
- 1 cupCucumber(diced)
- 0.25 cupOlive oil
- 0.25 cupLemon juice
- 1 to tasteSalt

Soak the bulgur for at least 1 hour before preparing the salad.

Drain and squeeze out moisture from the bulgur, dry on paper towel if necessary.

Place the bulgur in a bowl with the onion and mix thoroughly ensuring onion juice penetrates the grains.

Add the mint, parsley, tomato, cucumber, oil, lemon juice and salt.

Mix well and serve chilled.
