Tomato and Basil Soup
Fresh tomato soup with aromatic basil

Ingredients
- 2 tspOlive oil
- 1 tbspSugar
- 2 mediumSpanish onions(chopped)
- 0.5 cupBasil leaves
- 3 clovesGarlic(crushed)
- 0.5 cupReduced fat cream
- 1.6 kgTinned tomatoes
- 0.33 cupTomato paste
Instructions

Heat oil in a saucepan, add onions and garlic, cook until onions are soft.

Add undrained chopped tomatoes, tomato paste, sugar and basil leaves.

Bring to boil, simmer for 20 minutes stirring occasionally.

Blend tomato mixture until smooth, add cream, and stir over heat until hot.
