Tomato Soup
Classic rich tomato soup with herbs

Ingredients
- 1.2 kgTomatoes
- 2 clovesGarlic
- 2 mediumOnions(sliced)
- 1 leafBay leaf
- 16 leavesBasil leaves(chopped)
- 1 to tasteSalt and pepper
- 600 mlDouble cream
- 40 gUnsalted butter
Instructions

Cook whole tomatoes, strain and liquidise.

Pour tomatoes into a saucepan, add garlic, onion and bay leaf, and bring to the boil.

Lower heat and reduce.

Pass mixture through sieve and leave to cool.

Blend tomato mix, basil, cream and butter.

Bring to the boil and season.
