Vanilla Meringues
Light and airy meringues with cream and fresh berries

Ingredients
- 5 wholeEgg whites
- 1 tspVanilla essence
- 1.25 cupsCastor sugar
- 1 tbspCornflour
- 1 tspWhite vinegar
- 1 cupFresh berries
- 1 cupWhipped cream
Instructions

Preheat oven to 120°C.

Beat egg whites with electric mixer until soft peaks form.

Beat in sugar a little bit at a time.

Stir in cornflour then fold through vinegar and vanilla essence.

Put spoonfuls onto a greased tray lined with baking paper.

Place in oven for 45 minutes.

Turn off oven and allow meringues to cool in the oven.

Decorate with whipped cream and mixed berries.
