Zucchini Soup

Ingredients

  • 1.5 kgZucchini(sliced)
  • 4 cupsChicken stock
  • 2 mediumOnions(chopped)
  • 1 cupCelery(diced)
  • 0.5 tspNutmeg
  • 3 tbspSkim milk powder
  • 2 tbspFresh chives(chopped)
  • 1 to tasteSeasoning
  • 1 for servingNatural yoghurt

Instructions

    Place zucchini, chicken stock, onion and seasoning in a pot and simmer for 15 minutes.

    Cool slightly, blend and add milk. Mix thoroughly.

    When dissolved, return to heat but do not boil.

    Serve topped with natural yoghurt and chives.
