Zucchini Soup
Light and fresh zucchini soup with herbs

Ingredients
- 1.5 kgZucchini(sliced)
- 4 cupsChicken stock
- 2 mediumOnions(chopped)
- 1 cupCelery(diced)
- 0.5 tspNutmeg
- 3 tbspSkim milk powder
- 2 tbspFresh chives(chopped)
- 1 to tasteSeasoning
- 1 for servingNatural yoghurt
Instructions

Place zucchini, chicken stock, onion and seasoning in a pot and simmer for 15 minutes.

Cool slightly, blend and add milk. Mix thoroughly.

When dissolved, return to heat but do not boil.

Serve topped with natural yoghurt and chives.
